Recipe:
Pan Seared Zucchini with Garlic and Basil
Ingredients:
1 lb zucchini, sliced into ½ thick pieces
1 tsp salt
2 tbsp olive oil
2 tbsp red or white wine vinegar
1 clove garlic, minced
2 tbsp cooking oil
10 leaves fresh basil, thinly sliced
Instructions:
In a mixing bowl, toss zucchini and salt until the salt has coated most of the zucchini.
Line a sheet pan with a dish towel or paper towel and spread the zucchini flat on the towel for 20 minutes. This will help draw the moisture out of the zucchini.
Mix together olive oil, vinegar, and garlic.
Heat cooking oil in a large skillet over medium heat. Add zucchini to the skillet in a single layer and cook until golden brown on the bottom, about 4 – 7 minutes. Flip and continue cooking on the other side for an additional 6 – 7 minutes. Cook in batches until all zucchini is done.
Add warm zucchini to the bowl with the dressing and toss to combine. Fold in the basil just before serving.
