Tomato Peach Salad
Servings: 1
Ingredients
½ cup tri-colored cherry tomatoes, halved
1 plum tomato, halved and sliced
1 peach, sliced
2 Tbsp chickpeas, no salt added
Few thin slices red onion
1 cup arugula
¼ cup feta cheese, crumbled
Dressing
1 Tbsp balsamic vinegar
1 tsp olive oil
1 tsp honey
Directions
Place arugula on plate. Top with tomatoes, peach slices, chickpeas, red onion, and feta cheese.
Mix balsamic vinegar, olive oil and honey. Drizzle dressing on top of salad.
