Braised Chickpeas with Spinach and Roasted Sweet Potatoes

Serves: 6

Ingredients:
2 tbsp. olive oil
1 large onion, diced
2 shallots, diced
6 cloves garlic, minced
¼ cup sun dried tomatoes, finely chopped
1 tsp. tomato paste
½ tsp. red pepper flakes
2 tsp. ground ginger
1 tsp. lemon zest
¼ tsp. salt
½ tsp. black pepper
1 15 oz can low sodium chickpeas, drained and rinsed
1 lb fresh baby spinach
2 tbsp. lemon juice
1 13.5 oz can coconut milk
2 medium sweet potatoes, diced

Directions:

Preheat oven to 375oF.  Roast diced sweet potatoes until tender, about 25-30 minutes, flipping halfway.  Set aside.

In a large pan, heat olive oil.  Sauté onion until beginning to brown, about 5 minutes.  Add shallot and sauté another 3 minutes.  Add red pepper flakes and sun dried tomatoes, sauté for another 2 minutes.  Add garlic, ginger, lemon zest, salt, pepper, and tomato paste.  Sauté for an additional 3 minutes.  Add chickpeas and cook for 3 minutes.  Slowly add fresh spinach a handful at a time.  Add lemon juice and coconut milk, simmer and cook for about 10 minutes. 

Serve with roasted sweet potatoes.
